For the green beans

1 lb fresh green beans, trimmed and blanched
2 teaspoons butter or olive oil
1 small onion, thinly sliced
2 cloves garlic, chopped
1 tablespoon fresh thyme (or dried) or oregano (or dried)
salt to taste
pinch of cayenne pepper
hazelnuts or your favorite nuts, chopped

Instructions

  • For the green beans

    1. Prepare the fresh green beans by trimming them and boiling for 4-5 minutes, until tender-crisp. Drain and set aside.
    2. In a cast iron fry pan or saucepan, melt butter or olive oil. Add thinly sliced onion and chopped garlic, and cook over medium-low heat until the onion is just tender.
    3. Stir occasionally until the onion is translucent. Add the prepared green beans, fresh thyme (or dried), salt, and a pinch of cayenne pepper. Heat through.
    4. Just before serving, sprinkle with chopped hazelnuts or your favorite nuts for an added crunch.
