A delightful side dish of tender glazed carrots with a hint of balsamic vinegar and butter.
1⁄2 | cup butter |

3 1⁄2 | peeled, cut into 2-inch pieces, halved lengthwise |
5 | or to taste |
1⁄3 | cup balsamic vinegar |
1⁄4 | cup chopped |
| 1. | In a heavy large pot, melt the butter over medium heat. |

| 2. | Add the carrots and sauté for 5 minutes. |
| 3. | Cover and cook until the carrots are crisp-tender, stirring occasionally, for about 7 minutes. |
| 4. | Stir in the sugar and balsamic vinegar. |
| 5. | Cook uncovered until the carrots are tender and glazed, stirring frequently, for about 12 minutes longer. |
| 6. | Season to taste with salt and pepper. |
| 7. | Add the chopped parsley or cilantro and toss to blend. |
| 8. | Transfer to a serving bowl and serve. |
