Instructions

For preparing the dish

1. Scrub the large potatoes, then boil them in salted water until tender yet firm, approximately 15 minutes. Drain the potatoes thoroughly, refrigerate until cold, and then cut into 1/4-inch cubes.
2. In a large non-stick skillet, heat oil and butter over medium-high heat. Fry the potatoes for about 10 minutes, stirring frequently, until they are crisp and golden. Allow them to cool before stirring in the brie cheese, ham, parsley, green onion, and pepper.
3. Transfer the mixture to a greased, shallow 10-cup oval container, spreading it evenly. Create 8 wells in the potato mixture. Cover with foil (can be refrigerated for up to 24 hours at this stage).
4. Preheat the oven to 400 degrees Fahrenheit. Heat the mixture until warm, approximately 15 minutes. Remove from the oven and carefully crack 1 egg into each well, then sprinkle with paprika. Bake uncovered until the egg whites are set and the yolks are slightly soft, about 15 to 20 minutes.
