A delicious and hearty dish of bell peppers stuffed with a flavorful mixture of ground beef, rice, and vegetables, topped with melted mozzarella cheese.

Ingredients

12 cup uncooked white rice
34 cup water
4 green bell peppers
1 chopped onion
4 tablespoons olive oil
8 ground beef
2 tablespoons chopped fresh parsley
2 tomato sauce
4 shredded mozzarella cheese
salt
ground black pepper

Instructions

1. In a small saucepan, combine 1/2 cup of uncooked white rice and 3/4 cup of water.
2. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes.
3. Preheat your oven to 400 degrees F (205C) and prepare the bell peppers by cutting off the tops, removing the seeds, and placing them in a large baking dish.
4. Chop the usable portion of the pepper tops.
5. In a large skillet, heat 4 tablespoons of olive oil over medium heat.
6. Brown 8 ounces of ground beef in the skillet.
7. Add the chopped onions and peppers to the skillet with oil and cook until they are softened.
8. Mix in 2 tablespoons of chopped fresh parsley.
9. Reduce the heat to low and continue cooking for an additional 5 minutes.
10. Stir in the cooked rice and 2 cups of tomato sauce. Season the mixture to taste with salt and ground black pepper.
11. Spoon the filling into the prepared bell peppers and top each with the remaining tomato sauce.
12. Cover the baking dish and bake for approximately 45 minutes.
13. Uncover the dish, place shredded mozzarella cheese on top of each pepper, and bake until the cheese is melted and bubbly.
