Gourmet Stuffed Bell Peppers
A delicious and hearty dish of bell peppers stuffed with a flavorful mixture of ground beef, rice, and vegetables, topped with melted mozzarella cheese.
Ingredients
1⁄2 | cup uncooked white rice |

3⁄4 | cup water |
4 | green bell peppers |
1 | chopped onion |
4 | tablespoons olive oil |
8 | ground beef |
2 | tablespoons chopped fresh parsley |
2 | tomato sauce |
4 | shredded mozzarella cheese |

Instructions
| 1. | In a small saucepan, combine 1/2 cup of uncooked white rice and 3/4 cup of water. |

| 2. | Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes. |
| 3. | Preheat your oven to 400 degrees F (205C) and prepare the bell peppers by cutting off the tops, removing the seeds, and placing them in a large baking dish. |
| 4. | Chop the usable portion of the pepper tops. |
| 5. | In a large skillet, heat 4 tablespoons of olive oil over medium heat. |
| 6. | Brown 8 ounces of ground beef in the skillet. |
| 7. | Add the chopped onions and peppers to the skillet with oil and cook until they are softened. |
| 8. | Mix in 2 tablespoons of chopped fresh parsley. |
| 9. | Reduce the heat to low and continue cooking for an additional 5 minutes. |
| 10. | Stir in the cooked rice and 2 cups of tomato sauce. Season the mixture to taste with salt and ground black pepper. |
| 11. | Spoon the filling into the prepared bell peppers and top each with the remaining tomato sauce. |
| 12. | Cover the baking dish and bake for approximately 45 minutes. |
| 13. | Uncover the dish, place shredded mozzarella cheese on top of each pepper, and bake until the cheese is melted and bubbly. |
