Gourmet Stuffed Bell Peppers

A delicious and hearty dish of bell peppers stuffed with a flavorful mixture of ground beef, rice, and vegetables, topped with melted mozzarella cheese.

2 | tablespoons chopped fresh parsley |

Instructions

- In a small saucepan, combine 1/2 cup of uncooked white rice and 3/4 cup of water.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes.
- Preheat your oven to 400 degrees F (205C) and prepare the bell peppers by cutting off the tops, removing the seeds, and placing them in a large baking dish.
- Chop the usable portion of the pepper tops.
- In a large skillet, heat 4 tablespoons of olive oil over medium heat.
- Brown 8 ounces of ground beef in the skillet.
- Add the chopped onions and peppers to the skillet with oil and cook until they are softened.
- Mix in 2 tablespoons of chopped fresh parsley.
- Reduce the heat to low and continue cooking for an additional 5 minutes.
- Stir in the cooked rice and 2 cups of tomato sauce. Season the mixture to taste with salt and ground black pepper.
- Spoon the filling into the prepared bell peppers and top each with the remaining tomato sauce.
- Cover the baking dish and bake for approximately 45 minutes.
- Uncover the dish, place shredded mozzarella cheese on top of each pepper, and bake until the cheese is melted and bubbly.
