Grilled Asparagus with Sunny Side Up Egg and Herbed Panko

A delightful dish featuring grilled asparagus topped with a sunny side up egg and a flavorful herbed panko mixture.
Ingredients
1 | cup panko crumbs |

1 | teaspoon freshly minced garlic |
2 | tablespoons freshly chopped parsley |
2-4 eggs (depending on if each person wants one or two eggs) | |
kosher salt & pepper | |
extra virgin olive oil |
Instructions
1. | In a small glass bowl, combine panko crumbs, freshly minced garlic, and a drizzle of olive oil. |

2. | Heat a non-stick skillet over medium-low heat. Add the panko mixture and toast, stirring occasionally with a rubber spatula until lightly toasted. Remove from heat and transfer to a glass bowl. |
3. | Once the panko mixture has cooled slightly, toss with freshly chopped parsley and parmesan cheese. Set aside. |
4. | Heat a grill pan over medium-high heat. |
5. | Toss the asparagus in a drizzle of olive oil and a sprinkling of salt and pepper. Grill on the grill pan. |
6. | While the asparagus is grilling, heat 2 tablespoons of olive oil in a medium-large non-stick skillet. |
7. | Once hot, break one egg into the skillet. Let it settle and start cooking. On the opposite end, break the second egg. Allow both eggs to cook and bubble. |
8. | When the eggs are mostly cooked, sprinkle with a small amount of kosher salt. |
9. | Once the asparagus is done cooking, plate it on a serving plate. Sprinkle with the panko parsley parmesan mixture. Top with a sunny side up egg. Season with freshly grated pepper. |
10. | Serve hot and enjoy! |
