For preparing the batter
- Preheat the oven to 325 degrees F (165 degrees C). Grease a full-size bread pan with non-stick cooking spray and lightly dust with flour.
- In a large bowl, whisk together the eggs and sugar until the mixture is light and fluffy, which should take about 5 minutes.
- Add the mashed bananas, applesauce, milk, oil, and vanilla to the egg mixture, and beat until well combined.
- In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
- Gently fold the flour mixture into the banana mixture, stirring just until everything is incorporated.
- Carefully fold in the chopped walnuts.
- Pour the batter into the prepared pan, ensuring it does not fill more than half full. If using smaller pans, be cautious not to overfill to prevent overflow during baking.
