For the banana bread

2 eggs
cup white sugar
2 very ripe bananas, mashed
¼ cup applesauce
cup nonfat milk
1 tablespoon vegetable oil
¾ tablespoon vanilla extract
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
cup chopped walnuts

Instructions

  • For preparing the batter

    1. Preheat the oven to 325 degrees F (165 degrees C). Grease a full-size bread pan with non-stick cooking spray and lightly dust with flour.
    2. In a large bowl, whisk together the eggs and sugar until the mixture is light and fluffy, which should take about 5 minutes.
    3. Add the mashed bananas, applesauce, milk, oil, and vanilla to the egg mixture, and beat until well combined.
    4. In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
    5. Gently fold the flour mixture into the banana mixture, stirring just until everything is incorporated.
    6. Carefully fold in the chopped walnuts.
    7. Pour the batter into the prepared pan, ensuring it does not fill more than half full. If using smaller pans, be cautious not to overfill to prevent overflow during baking.
    8. Bake in the preheated oven until the bread is golden and a toothpick inserted into the center comes out clean, which should take about 1 hour.
    9. Remove the bread from the pan and let it cool on a wire rack.
