1. Drain the sauerkraut, pressing out any excess liquid.

4. Sauté the onion mixture for approximately 8 minutes, or until the onions are soft.
5. Add the sauerkraut, stock, and caraway seeds to the pot.
6. Cover and allow the stew to simmer gently for 1 1/2 to 2 hours.
7. To thicken the sauerkraut stew, combine 2-3 tablespoons of flour with 1 cup of sour cream. Stir this mixture into the sauerkraut stew.
8. Continue to simmer for an additional 10 minutes.
9. Season with salt, pepper, and a pinch of sugar, if desired.
10. For added flavor, consider incorporating sausages or other 'wurst.' Add them during the last 30 minutes of cooking.
