3 lbs sauerkraut or 2 quarts sauerkraut
1 tablespoon sweet paprika
4 tablespoons finely minced bacon
1 large onion, minced
3-4 cups stock or 3-4 cups water, as needed

1 cup sour cream
2-3 tablespoons flour

  • Preparation

    1. Drain the sauerkraut, pressing out any excess liquid.
    2. Rinse the sauerkraut one or two times to mellow the flavor.
    3. In a dutch oven or casserole, melt the bacon over medium heat. Once hot, add the minced onion and sweet paprika.
    4. Sauté the onion mixture for approximately 8 minutes, or until the onions are soft.
    5. Add the sauerkraut, stock, and caraway seeds to the pot.
    6. Cover and allow the stew to simmer gently for 1 1/2 to 2 hours.
    7. To thicken the sauerkraut stew, combine 2-3 tablespoons of flour with 1 cup of sour cream. Stir this mixture into the sauerkraut stew.
    8. Continue to simmer for an additional 10 minutes.
    9. Season with salt, pepper, and a pinch of sugar, if desired.
    10. For added flavor, consider incorporating sausages or other 'wurst.' Add them during the last 30 minutes of cooking.
