Preparation
- Drain the sauerkraut, pressing out any excess liquid.
- Rinse the sauerkraut one or two times to mellow the flavor.
- In a dutch oven or casserole, melt the bacon over medium heat. Once hot, add the minced onion and sweet paprika.
- Sauté the onion mixture for approximately 8 minutes, or until the onions are soft.
- Add the sauerkraut, stock, and caraway seeds to the pot.
- Cover and allow the stew to simmer gently for 1 1/2 to 2 hours.
- To thicken the sauerkraut stew, combine 2-3 tablespoons of flour with 1 cup of sour cream. Stir this mixture into the sauerkraut stew.
- Continue to simmer for an additional 10 minutes.
- Season with salt, pepper, and a pinch of sugar, if desired.
- For added flavor, consider incorporating sausages or other 'wurst.' Add them during the last 30 minutes of cooking.
