Hearty Oatmeal Rhubarb Pancakes

1⁄2 | banana, mashed |
1 | cup finely chopped rhubarb |
2 | tablespoons vegetable oil |
Instructions
1. | In a large bowl, combine unbleached all-purpose flour, quick cooking oats, brown sugar, ground cinnamon, baking soda, and salt. In another bowl, mix nonfat milk with lemon juice and incorporate mashed banana. Gently fold the banana mixture into the flour mixture and then carefully add in the finely chopped rhubarb. |
