4 Cornish hens
4 sprigs of fresh rosemary
20-25 cloves of fresh garlic
1 lemon
3 tablespoons olive oil
cup chicken broth
cup dry white wine

    1. Preheat the oven to 450°F (230°C).
    2. Rinse the Cornish game hens under cold water and pat them dry with paper towels.
    3. Lightly season the cavities of the hens with salt and pepper.
    4. Cut the lemon into 4 wedges.
    5. Stuff each hen with 1 lemon wedge, 1 sprig of rosemary, and 1-2 cloves of peeled garlic. Rub the outside of the hens with 1 tablespoon of olive oil.
    6. Season the outside of the hens with salt and pepper.
    7. Arrange the hens in a roasting pan, placing the peeled garlic cloves around them.
    8. Roast the hens in the preheated oven for approximately 25 minutes at 450°F (230°C).
    9. Reduce the oven temperature to 350°F (175°C) and pour the chicken broth, white wine, and remaining olive oil over the hens.
    10. Continue to roast the hens for about 25 minutes, or until the juices run clear when pierced at the thickest part. Baste the hens every 10 minutes during this final cooking time.
    11. Remove the hens from the pan and transfer the remaining juices, including any from the cavities, into a medium saucepan. Boil the juices for about 6 to 8 minutes, or until they reach the desired consistency.
    12. Arrange the Cornish game hens on plates and spoon the sauce and garlic over and around each hen. For a final touch, garnish with additional sprigs of rosemary.
    13. This recipe serves 4-8 people. To increase the number of servings, you can cut the hens in half.
    14. Pair this dish with a light salad and rice pilaf, and complement the meal with a glass of your favorite white wine.
