Indulge in the vibrant and delightful Filipino purple yam bread rolls, famously known as ube pandesal. Making these gourmet rolls is a breeze using the dough cycle of a bread machine.

Ingredients

1 ½ cups 2% milk
½ cup unsalted butter
2 eggs
1 teaspoon salt
3 cups bread flour
1 (4 ounce) packet purple yam powder, or more to taste
3 ½ teaspoons bread machine yeast
½ cup unseasoned bread crumbs, or as needed

Instructions

1. Warm the milk by gently heating it in a microwave-safe bowl for about 1 minute.
2. Melt the butter in a microwave-safe bowl by heating it for approximately 30 seconds.
3. Prepare the eggs by soaking them in warm water for a minute. Drain, crack into a bowl, and lightly beat with a fork.
4. In the bread machine, combine the warm milk, melted butter, beaten eggs, salt, bread flour, purple yam powder, and bread machine yeast in the specified order. Activate the 'Dough' cycle.
5. Preheat your oven to 375 degrees F (190 degrees C).
6. Transfer the dough into a greased bowl. Deflate the dough using your fist, then divide it into 24 uniform pieces and shape each into a ball.
7. Coat the dough balls evenly by rolling them in bread crumbs placed in a shallow plate. Arrange the coated balls closely together in an ungreased baking pan.
8. Bake in the preheated oven until the tops are a beautiful golden brown, for approximately 15 minutes.
