Ingredients

1 lb cut into 24 chunks
2 chopped
1 seeded and chopped
3 tablespoons divided
1 tablespoon peeled and chopped
2 tablespoons chopped
1 teaspoon dried
1 teaspoon dried
½ teaspoon to taste
2 cut into 1-inch pieces

Instructions

    1. In a blender, combine green onions, jalapeno, gingerroot, white wine vinegar, ground allspice, dried thyme, salt, and 3 tablespoons of extra virgin olive oil until smooth.
    2. Place the boneless, skinless chicken breast chunks in a resealable plastic bag with the marinade, ensuring they are well coated. Refrigerate for 30 minutes.
    3. In a small bowl, toss red bell pepper pieces with the remaining olive oil.
    4. Preheat the broiler or grill, positioning the rack close to the heat source.
    5. Thread the marinated chicken and red bell pepper alternately onto 4 metal skewers.
    6. Brush the kabobs with any leftover marinade.
    7. Grill the kabobs for a total of 10 minutes, turning once, or until the chicken is cooked through and no longer pink inside.
