1/4 cup fresh lemon juice
1 teaspoon finely minced lemon zest
3 garlic cloves, minced
16 prawns or 16 large shrimp, shelled and deveined
1 lb French haricots verts or 1 pound of green beans, blanched
salt to taste
fresh ground black pepper to taste
2 dry white wine
2 shallots, minced
2 chicken stock
2 heavy cream
2/3 cup grated Parmigiano-Reggiano cheese
salt to taste
fresh ground white pepper to taste

Instructions

  • For Marinating Prawns

    1. Begin by placing the prawns in a shallow dish.
    2. In a small bowl, mix the extra virgin olive oil, fresh lemon juice, finely minced lemon zest, and garlic. Pour the marinade over the prawns, ensuring they are well coated. Allow the prawns to marinate in the refrigerator for at least 1 hour, or ideally overnight for the flavors to meld perfectly.
  • Cooking Instructions

    1. In a large sauté pan over medium heat, warm 2 tablespoons of the marinade. Using a slotted spoon, transfer the marinated prawns to the pan and sauté for 4 to 5 minutes until they turn pink. Season with salt and pepper, then add the haricots verts to the pan, tossing until heated through.
    2. Transfer the cooked prawns and haricots verts to a warmed serving platter and serve with the delectable Parmigiano-Reggiano Cream Sauce on the side.
    3. To prepare the Parmigiano-Reggiano Cream Sauce, start by cooking the wine and shallots in a large saucepan over high heat until most of the liquid evaporates. Add the chicken stock and continue cooking over high heat until the liquid is reduced by half.
    4. Pour in the heavy cream and heat it through. Finally, stir in the grated Parmigiano-Reggiano cheese until melted and season the sauce with salt and pepper to taste.
