1 | (8 ounce) carton lemon yogurt |
⅓ | cup canola oil |

Instructions
For preparing the batter | |

1. | In a medium mixing bowl, combine all-purpose flour, sugar, lemon peel, baking powder, baking soda, and salt. Create a well in the center of the dry ingredients. Set aside. |
2. | In another bowl, mix together the beaten egg, lemon yogurt, canola oil, and vanilla extract. Add the egg mixture all at once to the flour mixture. Stir until just moistened (the batter will still be lumpy). |
For baking and serving | |
1. | Spoon the batter into muffin tins, filling them 2/3 full. Bake in a preheated 400°F (200°C) oven for 18-20 minutes or until golden. Allow to cool in the pan for 5 minutes. |
2. | While the muffins are cooling in the pan, combine the lemon juice and sifted powdered sugar to create a glaze. Remove the muffins from the pan and drizzle the glaze over the muffins while they are still warm. Serve the muffins warm. |
