1 12 cups all-purpose flour
1 12 teaspoons baking powder
12 cup granulated sugar
12 teaspoon baking soda
14 cup unsalted butter, softened
1 large egg
34 cup sour cream
14 cup milk
1 tablespoon fresh lemon juice
2 teaspoons fresh lemon zest

Instructions

  • Muffin Preparation

    1. Preheat your oven to 400°F (200°C).
    2. In a large mixing bowl, combine the flour, baking powder, and baking soda. Cut in the butter until the mixture resembles coarse crumbs, then create a well in the center.
    3. In a separate small bowl, beat the egg and then add the sugar, lemon zest, lemon juice, sour cream, and milk. Mix until well combined.
    4. Gradually pour the wet mixture into the well of the flour mixture, mixing gently until just moistened. Be careful not to overmix.
    5. Spoon the batter into greased muffin pans, filling each cup approximately 2/3 full. For larger muffins with a higher dome, fill the cups all the way; this may yield fewer muffins overall.
    6. Bake in the preheated oven for about 15 minutes or until the tops are lightly browned and a toothpick inserted in the center comes out clean.
