A delightful and nutritious porridge made with amaranth, flavored with warm cinnamon and maca powder, sweetened with maple syrup, and served with a touch of almond milk or kefir.

Ingredients

1 cup dry amaranth
3 water
2 tablespoons maple syrup
1 tablespoon ghee or coconut oil
1 teaspoon cinnamon
1 teaspoon maca powder
almond milk or kefir

Instructions

1. In a small pot or saucepan, bring the water to a boil. Add the dry amaranth and let it simmer for 20-25 minutes. Stir in the ghee or coconut oil, cinnamon, and maca powder, and continue cooking for another 5 minutes until the porridge reaches a thick consistency.
2. To serve, pour a splash of almond milk or kefir over the porridge and top it with a handful of pomegranate seeds or fresh berries.
