A delightful Mediterranean-inspired dish featuring wilted spinach topped with a flavorful tomato mixture, feta cheese, and capers.

Ingredients

12 cup sliced
1 clove pressed
1 12 teaspoon chopped
2 chopped
1 14 rinsed and drained, stems removed
3 crumbled
1 tablespoon

Instructions

1. In a bowl, combine sliced green onions, pressed garlic, and chopped dill with 1/4 cup of water.
2. Stir-fry the mixture over medium heat until the onions are soft and almost all the liquid has evaporated.
3. Transfer the cooked mixture to a bowl and gently stir in the chopped tomatoes. Keep warm.
4. In the same pan, add half of the spinach along with 1 tablespoon of water.
5. Stir-fry over medium heat until the spinach is just starting to wilt.
6. Add the remaining spinach and continue stir-frying until all the spinach is fully wilted (approximately 2 minutes). Using a slotted spoon, transfer the spinach to a serving platter, spread it out slightly, and discard any excess liquid from the pan.
7. Top the wilted spinach with the tomato mixture, sprinkle with crumbled feta cheese and capers.
8. Season with pepper to taste and serve hot.
