Mediterranean Spinach Stir-Fry

A delightful Mediterranean-inspired dish featuring wilted spinach topped with a flavorful tomato mixture, feta cheese, and capers.

Instructions

- In a bowl, combine sliced green onions, pressed garlic, and chopped dill with 1/4 cup of water.
- Stir-fry the mixture over medium heat until the onions are soft and almost all the liquid has evaporated.
- Transfer the cooked mixture to a bowl and gently stir in the chopped tomatoes. Keep warm.
- In the same pan, add half of the spinach along with 1 tablespoon of water.
- Stir-fry over medium heat until the spinach is just starting to wilt.
- Add the remaining spinach and continue stir-frying until all the spinach is fully wilted (approximately 2 minutes). Using a slotted spoon, transfer the spinach to a serving platter, spread it out slightly, and discard any excess liquid from the pan.
- Top the wilted spinach with the tomato mixture, sprinkle with crumbled feta cheese and capers.
- Season with pepper to taste and serve hot.
