A delightful Mediterranean-inspired dish featuring wilted spinach topped with a flavorful tomato mixture, feta cheese, and capers.

| 1. | In a bowl, combine sliced green onions, pressed garlic, and chopped dill with 1/4 cup of water. |

| 2. | Stir-fry the mixture over medium heat until the onions are soft and almost all the liquid has evaporated. |
| 3. | Transfer the cooked mixture to a bowl and gently stir in the chopped tomatoes. Keep warm. |
| 4. | In the same pan, add half of the spinach along with 1 tablespoon of water. |
| 5. | Stir-fry over medium heat until the spinach is just starting to wilt. |
| 6. | Add the remaining spinach and continue stir-frying until all the spinach is fully wilted (approximately 2 minutes). Using a slotted spoon, transfer the spinach to a serving platter, spread it out slightly, and discard any excess liquid from the pan. |
| 7. | Top the wilted spinach with the tomato mixture, sprinkle with crumbled feta cheese and capers. |
| 8. | Season with pepper to taste and serve hot. |
