| 24 | large mixed mushrooms, stalks removed (regular mushrooms, not mixed) |

| 1 | cup tomatoes, chopped | 
| 1⁄2 | cup black olives, pits removed and chopped (kalamata) | 
| 2 | tablespoons feta cheese, crumbled | 
| 1 | garlic clove, finely chopped | 
| 1 | teaspoon fresh basil, chopped ( spinach or parsley ) | 
| 1. | Arrange the mushrooms, smooth side up, on a baking sheet lined with parchment paper. Bake in a preheated oven at 425°F (220°C) for 5 minutes. Remove from the oven and allow to cool slightly. Flip the mushrooms so the hollow side faces up. |

| 2. | In a mixing bowl, combine the tomatoes, olives, feta cheese, garlic, and basil. Using a spoon, fill each mushroom cap with the mixture. Continue baking at 425°F (220°C) for 8 to 10 minutes or until the mushrooms are tender and heated through. Optional : When the mushrooms are almost done you can add a little bit of cheese. |
