Ingredients

24 large mixed mushrooms, stalks removed (regular mushrooms, not mixed)
1 cup tomatoes, chopped
12 cup black olives, pits removed and chopped (kalamata)
2 tablespoons feta cheese, crumbled
1 garlic clove, finely chopped
1 teaspoon fresh basil, chopped ( spinach or parsley )

Instructions

1. Arrange the mushrooms, smooth side up, on a baking sheet lined with parchment paper. Bake in a preheated oven at 425°F (220°C) for 5 minutes. Remove from the oven and allow to cool slightly. Flip the mushrooms so the hollow side faces up.
2. In a mixing bowl, combine the tomatoes, olives, feta cheese, garlic, and basil. Using a spoon, fill each mushroom cap with the mixture. Continue baking at 425°F (220°C) for 8 to 10 minutes or until the mushrooms are tender and heated through. Optional : When the mushrooms are almost done you can add a little bit of cheese.
