A refreshing and vibrant salad inspired by the flavors of the Mediterranean.

Ingredients

fresh tomatoes, chopped

cucumber, peeled and chopped

green bell pepper, cut into ½" pieces

cup chopped red onion

tablespoon red wine vinegar

tablespoon balsamic vinegar

tablespoon extra virgin olive oil

teaspoon salt

tablespoon chopped fresh oregano

cup kalamata olives

cup feta cheese, crumbled (I use the fat free type)

Instructions

1. In a mixing bowl, combine the red wine vinegar, balsamic vinegar, extra virgin olive oil, salt, and chopped fresh oregano.
2. Add the fresh tomatoes, peeled and chopped cucumber, green bell pepper cut into ½" pieces, and chopped red onion to the bowl.
3. Mix all ingredients thoroughly to ensure an even coating of the dressing. Allow the salad to marinate in the refrigerator for several hours to enhance and blend the flavors.
4. Serve the salad topped with kalamata olives and crumbled feta cheese. Enjoy!
