Preparation
- Preheat the oven to 400°F (200°C) and prepare a 12-cup muffin tin by greasing or lining with cupcake papers.
- In a large bowl, combine the all-purpose flour, whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, rolled oats, Splenda, and chopped walnuts.
- In a separate bowl, mix the egg, low-fat buttermilk, apple butter, light olive oil, and grated unpeeled apple. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
- Divide the batter equally among the prepared muffin cups.
- In a small bowl, mix together brown sugar, chopped walnuts, and rolled oats for the topping. Sprinkle this mixture over the muffin tops.
- Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Note that the muffins may not rise significantly.
- Allow the muffins to cool in the tin for 10 minutes before transferring them to a rack to cool completely.
