1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup rolled oats, not quick cooking
1/3 cup Splenda granular
3 tablespoons walnuts, chopped
1 egg
1 cup low-fat buttermilk
2 tablespoons apple butter (see Sugar Free Crock Pot Apple Butter)
2 tablespoons light olive oil
1 cup cooking apple, grated, unpeeled (Rome, Jonagold, Granny Smith)
1 tablespoon brown sugar
1 tablespoon walnuts, chopped
1 tablespoon rolled oats

Instructions

  • Preparation

    1. Preheat the oven to 400°F (200°C) and prepare a 12-cup muffin tin by greasing or lining with cupcake papers.
    2. In a large bowl, combine the all-purpose flour, whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, rolled oats, Splenda, and chopped walnuts.
    3. In a separate bowl, mix the egg, low-fat buttermilk, apple butter, light olive oil, and grated unpeeled apple. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
    4. Divide the batter equally among the prepared muffin cups.
    5. In a small bowl, mix together brown sugar, chopped walnuts, and rolled oats for the topping. Sprinkle this mixture over the muffin tops.
    6. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Note that the muffins may not rise significantly.
    7. Allow the muffins to cool in the tin for 10 minutes before transferring them to a rack to cool completely.
