A delicious and simple recipe for pan-seared barramundi fillets topped with a flavorful lemon butter sauce.

Ingredients

4 barramundi fillets (skin on or off)
cooking spray (canola or olive oil)
2 tablespoons salted butter
1 small garlic clove
12 teaspoon salt
3 tablespoons lemon juice
4-6 fresh basil leaves (or ¾ tsp. dry)

Instructions

    1. Begin by rinsing the barramundi fillets and patting them dry with a paper towel.
    2. Lightly spray the fillets with canola or olive oil.
    3. In a hot skillet, saute the fillets for 3 minutes on high heat with the skin side up.
    4. Carefully flip the fillets and cook for an additional minute. Transfer the cooked fillets to a serving dish.
    5. To prepare the sauce, gently saute a small garlic clove and salted butter in the skillet for about 2 minutes. Stir in salt, lemon juice, and torn basil leaves.
    6. Remove the skillet from heat and spoon the lemon butter sauce over the barramundi fillets just before serving.
