A delightful and aromatic chicken korma recipe that is made in no time. Perfect for a busy weeknight dinner!

Ingredients

1 fresh ginger, grated
5 garlic cloves, chopped
6 tablespoons vegetable oil
3 bay leaves
1 cinnamon stick, 2-inches
8 cardamom pods
4 whole cloves
¼ teaspoon cumin seed
1 small onion, finely diced
1 tablespoon ground coriander
1 tablespoon ground cumin
3 canned plum tomatoes, chopped
3 chicken breasts, skinned and cut into chunks
cayenne pepper
¾ teaspoon salt
3 tablespoons heavy whipping cream

Instructions

1. In the container of an electric blender, combine fresh ginger, garlic, and 3 tablespoons of water. Blend until a smooth paste is formed.
2. Heat vegetable oil in a wide frying pan over high heat. Once hot, add bay leaves, a 2-inch cinnamon stick, cardamom pods, whole cloves, and cumin seeds. Stir briefly, then add finely diced onion. Cook and stir for approximately 3 minutes, or until the onion is lightly browned.
3. Add the paste from the blender, ground coriander, and ground cumin to the pan. Stir and cook for 1 minute, then add the chicken, cayenne pepper, salt, and 1 cup of water.
4. Bring the mixture to a boil.
5. Cover the pan, reduce the heat to medium, and simmer for 15 minutes, turning the chicken pieces occasionally.
6. Uncover the pan, pour in the heavy whipping cream, and increase the heat to high. Cook for an additional 7-8 minutes, or until the sauce has thickened. Stir gently throughout.
