Quick and Easy Chicken Korma
A delightful and aromatic chicken korma recipe that is made in no time. Perfect for a busy weeknight dinner!
Ingredients
1 | fresh ginger, grated |

5 | garlic cloves, chopped |
6 | tablespoons vegetable oil |
3 | bay leaves |
1 | cinnamon stick, 2-inches |
8 | cardamom pods |
4 | whole cloves |
¼ | teaspoon cumin seed |
1 | small onion, finely diced |
1 | tablespoon ground coriander |
1 | tablespoon ground cumin |
3 | canned plum tomatoes, chopped |
3 | chicken breasts, skinned and cut into chunks |

¾ | teaspoon salt |
3 | tablespoons heavy whipping cream |
Instructions
1. | In the container of an electric blender, combine fresh ginger, garlic, and 3 tablespoons of water. Blend until a smooth paste is formed. |

2. | Heat vegetable oil in a wide frying pan over high heat. Once hot, add bay leaves, a 2-inch cinnamon stick, cardamom pods, whole cloves, and cumin seeds. Stir briefly, then add finely diced onion. Cook and stir for approximately 3 minutes, or until the onion is lightly browned. |
3. | Add the paste from the blender, ground coriander, and ground cumin to the pan. Stir and cook for 1 minute, then add the chicken, cayenne pepper, salt, and 1 cup of water. |
4. | Bring the mixture to a boil. |
5. | Cover the pan, reduce the heat to medium, and simmer for 15 minutes, turning the chicken pieces occasionally. |
6. | Uncover the pan, pour in the heavy whipping cream, and increase the heat to high. Cook for an additional 7-8 minutes, or until the sauce has thickened. Stir gently throughout. |
