Ranch Style Eggs

A delightful Tex-Mex inspired dish featuring eggs, tortillas, and a flavorful blend of tomatoes, chilies, and cheese.

6 | 6-inch tortillas |
1⁄2 | cup chopped onion |
2 | tablespoons cooking oil |
1 | clove garlic, minced |
3 | large tomatoes, peeled, cored, and chopped |
1 | (4 ounce) can chopped green chilies |
1⁄4 | teaspoon salt |
1 | tablespoon cooking oil |
1 | cup shredded cheese |
Instructions

- In a small skillet, heat 2 tablespoons of oil. Using tongs, gently dip each tortilla in the oil for approximately ten seconds or until soft and pliable.
- Line a 10x6x2 inch baking dish with the prepared tortillas and keep them warm.
- In the same skillet, add 2 tablespoons of oil and sauté the chopped onion and minced garlic until tender.
- Stir in the peeled, cored, and chopped tomatoes, the canned chopped green chilies, and salt. Allow the mixture to simmer for 10 minutes.
- Pour the tomato and chili mixture over the prepared tortillas.
- Beat the eggs and cook them in the skillet until they are set. Place the cooked eggs on top of the tortilla mixture and sprinkle shredded cheese over the top.
- Place the baking dish in the oven just until the cheese melts.
- Serve the Ranch Style Eggs warm and enjoy!
