A delightful Tex-Mex inspired dish featuring eggs, tortillas, and a flavorful blend of tomatoes, chilies, and cheese.

Ingredients

6 eggs
6 6-inch tortillas
12 cup chopped onion
2 tablespoons cooking oil
1 clove garlic, minced
3 large tomatoes, peeled, cored, and chopped
1 (4 ounce) can chopped green chilies
14 teaspoon salt
1 tablespoon cooking oil
1 cup shredded cheese

Instructions

1. In a small skillet, heat 2 tablespoons of oil. Using tongs, gently dip each tortilla in the oil for approximately ten seconds or until soft and pliable.
2. Line a 10x6x2 inch baking dish with the prepared tortillas and keep them warm.
3. In the same skillet, add 2 tablespoons of oil and sauté the chopped onion and minced garlic until tender.
4. Stir in the peeled, cored, and chopped tomatoes, the canned chopped green chilies, and salt. Allow the mixture to simmer for 10 minutes.
5. Pour the tomato and chili mixture over the prepared tortillas.
6. Beat the eggs and cook them in the skillet until they are set. Place the cooked eggs on top of the tortilla mixture and sprinkle shredded cheese over the top.
7. Place the baking dish in the oven just until the cheese melts.
8. Serve the Ranch Style Eggs warm and enjoy!
