12 thickly sliced bacon (or salt pork)

1 cup milk
1 egg
1 cup flour
2 teaspoons salt (or less)

    1. In a heavy skillet, fry the thickly sliced bacon until crisp. Once done, transfer the bacon to a warm plate and reserve 1 tablespoon of bacon fat in the skillet.
    2. Peel the russet potatoes and coarsely grate them. Place the grated potatoes in a paper towel and squeeze out any excess moisture.
    3. In a mixing bowl, whisk together milk, egg, flour, and salt to create a batter. Gently fold in the grated potatoes into the batter.
    4. Heat a pan over medium-high heat. Using a 1/3 cup measuring cup, scoop the batter onto the pan and flatten each pancake to a 3-inch diameter. Fry the pancakes for a few minutes on each side until they turn golden brown.
    5. Transfer the cooked pancakes to a platter in a warm oven to keep them heated while preparing the rest.
