Instructions
1. | Begin by preheating the oven to 400 degrees F (200 degrees C). Lightly coat a cast iron skillet or 8-inch cake pan with cooking spray and set it aside. In a mixing bowl, whisk together eggs and milk until they reach a consistent texture. Add shredded mozzarella, salt, pepper, and garlic powder, and incorporate the ingredients well. |

2. | In a small frying pan, heat 1 tablespoon of canola oil over medium-high heat for approximately 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until it is nicely browned, ensuring to break up the sausage into small pieces while stirring, then proceed to drain the excess fat. |
3. | Spread the cooked sausage, arugula, and halved grape tomatoes evenly in the prepared pan. Pour the egg mixture over the vegetables and sausage. Transfer the pan into the preheated oven and bake for around 20 minutes, or until the center of the frittata is fully cooked and set. |
