14 teaspoon instant yeast
2 teaspoons salt
sliced spanish chorizo
grams cheese of your choice, cut in small slices (optional)

1. Begin by adding the flour, yeast, and salt to a large bowl. Whisk the ingredients together to distribute evenly. Pour in the water and stir until well blended, resulting in a shaggy and sticky dough. Cover the bowl with plastic wrap and allow the dough to rest for 12 to 18 hours at room temperature, away from any breeze.
2. Once the dough's surface is dotted with bubbles, transfer it to a lightly floured work surface. Fold the dough over itself, similar to folding a letter, and let it rest for about 15 minutes. Shape the dough into a ball, place it seam side down in a floured bowl, cover, and let it rest for another 2 hours until doubled in size.
3. Preheat the oven to 500°F. Divide the chorizo slices into six portions. Prepare a baking sheet by dusting it with flour. When the dough is ready, divide it into six portions, fill each with chorizo, fold the dough over, and seal. Place the rolls on the baking sheet and bake for 20-25 minutes until golden and hollow sounding.
