Savory Leek and Goat’s Cheese Quiche

A delightful and flavorful quiche made with leeks, goat’s cheese, and a hint of tarragon, wrapped in a crispy shortcrust pastry.

1 | ready-rolled shortcrust pastry |

500 | grams sliced very thinly |
25 | grams butter |
2 | tablespoons chopped |
300 | milliliters milk |
4 | eggs |
200 | grams half chopped, the rest sliced |
1 | tablespoon roughly chopped (optional) |
Instructions
1. | Preheat the oven to 200°C/400°F. |

2. | Prepare the quiche tin by lining it with baking parchment. Unroll the ready-rolled shortcrust pastry and carefully fit it into the tin. |
3. | Place another layer of baking parchment over the pastry, fill it with baking beans, and blind bake in the preheated oven for 15-20 minutes. Remove the paper and beans, then bake for an additional 5 minutes to dry the base. |
4. | Meanwhile, in a large non-stick frying pan, sauté the thinly sliced leeks and chopped tarragon with butter until the leeks have released and evaporated their liquid. Set the mixture aside to cool slightly. |
5. | In a large bowl, whisk together the milk, eggs, freshly grated nutmeg, and a pinch of salt and pepper until well combined. Stir in the chopped goat’s cheese. |
6. | Carefully spoon the leek mixture onto the baked pastry, arrange the sliced goat’s cheese on top, and sprinkle with the chopped almonds or hazelnuts if desired. |
7. | Bake the quiche for 30-40 minutes, or until golden brown and the filling is set. |
8. | Serve the savory quiche warm, cold, or at room temperature, perfect for enjoying at home or a delightful picnic in the park. |
