1. | Combine instant potato flakes, baking powder, and flour in a medium bowl. Mix well. |
2. | In another bowl, combine milk, beaten eggs, and canola oil. Beat well. |
3. | Add finely sliced green onions and garlic powder (or fresh garlic) to the wet ingredients. |
4. | Pour the wet ingredients into the dry ingredients. |
5. | Using a fork, blend until large lumps are gone. The batter should be slightly lumpy. |
6. | Heat oil in a 10-inch nonstick skillet or preheat a griddle to about 375°F (190°C). |
7. | Drop 1/3 cup of batter into the skillet or onto the griddle. |
8. | Cook until the bottoms of the pancakes are browned and bubbles on the surface begin to break. Flip the pancakes and brown the other side. |
9. | Remove the pancakes to a serving plate and serve with applesauce and/or sour cream. |
