| 2 | cups potatoes (shredded) |

| 1⁄2 | teaspoons baking powder | 
| 1⁄2 | cup flour | 
| 2 | tablespoons milk | 
| 1 | egg, beaten | 
| 2 | tablespoons canola oil (or other of your choice) | 
| 1⁄2 | cup green onion, finely sliced | 
| 1 | teaspoon garlic powder or 1 fresh garlic | 
| • | salt or seasoning salt | 
| • | pepper | 
| • | olive oil | 
| Preparation and Cooking Instructions | |

| 1. | Combine shredded potato, baking powder, and flour in a medium bowl. Mix well. | 
| 2. | In another bowl, combine milk, beaten eggs, and canola oil. Beat well. | 
| 3. | Add finely sliced green onions and garlic powder (or fresh garlic) to the wet ingredients. | 
| 4. | Pour the wet ingredients into the dry ingredients. | 
| 5. | Using a fork, blend until large lumps are gone. The batter should be slightly lumpy. | 
| 6. | Heat oil in a nonstick skillet or preheat a griddle to about 375°F (190°C). | 
| 7. | Drop 1/3 cup of batter into the skillet or onto the griddle. | 
| 8. | Cook until the bottoms of the pancakes are browned and bubbles on the surface begin to break. Flip the pancakes and brown the other side. | 
| 9. | Remove the pancakes to a serving plate and serve with applesauce and/or sour cream. |
