2 teaspoons baking powder
¾ cup flour
2 ½ cups milk
2 eggs, beaten
2 tablespoons canola oil
½ cup green onion, finely sliced
1 teaspoon garlic powder or 1 fresh garlic
salt or seasoning salt

canola oil (for frying, or for brushing griddle)

    1. Combine instant potato flakes, baking powder, and flour in a medium bowl. Mix well.
    2. In another bowl, combine milk, beaten eggs, and canola oil. Beat well.
    3. Add finely sliced green onions and garlic powder (or fresh garlic) to the wet ingredients.
    4. Pour the wet ingredients into the dry ingredients.
    5. Using a fork, blend until large lumps are gone. The batter should be slightly lumpy.
    6. Heat oil in a 10-inch nonstick skillet or preheat a griddle to about 375°F (190°C).
    7. Drop 1/3 cup of batter into the skillet or onto the griddle.
    8. Cook until the bottoms of the pancakes are browned and bubbles on the surface begin to break. Flip the pancakes and brown the other side.
    9. Remove the pancakes to a serving plate and serve with applesauce and/or sour cream.
