A delightful dish of shrimp and vegetables cooked to perfection in a savory sesame ginger sauce, wrapped in a convenient pouch for easy grilling or baking.

Ingredients

1 lb medium raw shrimp, peeled and deveined
1 cup sliced mushrooms
2 fresh broccoli florets, frozen (if using, thaw and drain before)
1 small red bell pepper, cut into strips
2 cloves garlic, minced
½ teaspoon grated, minced fresh ginger
1 teaspoon dark sesame oil

Instructions

    1. Preheat the grill to medium-high heat or set the oven to 450 degrees.
    2. Prepare foil cooking pouches by using either foil cooking bags or pieces of aluminum foil.
    3. Combine the medium raw shrimp, sliced mushrooms, fresh broccoli florets, red bell pepper strips, minced garlic, minced ginger, and dark sesame oil in the foil pouch.
    4. For grilling: Place the foil pouch on the grill rack and cook for 15-20 minutes or until the shrimp is no longer pink.
    5. For baking in the oven: Position the pouch in a cake pan or on a cookie sheet with sides.
    6. Bake for 25-30 minutes, or until the shrimp is fully cooked and no longer pink.
