Ingredients

For Soy Ginger Chicken or Salmon Foil Packets

12 ounces boneless skinless chicken breasts or salmon fillets
1 cup reduced sodium soy sauce
2 teaspoons ginger
3 garlic cloves, minced
1 chopped carrot
1 chopped celery
1 cup green beans, cut in half
14 cup chopped onion
18 chopped green pepper
1 potato, ¼ inch cubed

Instructions

  • For Preparation

    1. Preheat the oven to 450°F (230°C) if cooking in an oven.
    2. For campers, prepare the foil packets beforehand and pack them in ice.
  • For Cooking

    1. Combine the reduced sodium soy sauce, ginger, and minced garlic in a mixing bowl.
    2. Tear off 2 sheets of aluminum foil, each measuring 12 x 18 inches. Place one chicken breast or salmon fillet in the center of each foil sheet. Make two small slits in each chicken breast.
    3. Add chopped carrot, celery, onion, green pepper, potato, and green beans on top of the protein. Drizzle the soy-ginger-garlic mixture over the chicken or salmon and vegetables.
    4. Bring up the sides of the foil and fold over the top edge twice, then seal the ends, allowing room for air circulation inside the packets.
    5. Place the foil packets on a baking sheet and bake for 20 minutes or until the internal temperature of the chicken or salmon reaches a minimum of 165°F (74°C).
    6. Alternatively, place the foil packets on fire coals and cook for 20 minutes, turning every 3-4 minutes for even cooking.
