Instructions
For Bean Preparation and Marination | |

1. | Prepare a large saucepan by bringing 2 quarts of water and salt to a rolling boil. |
2. | Add the green and wax beans; cook for 4 minutes or until they are crisp-tender. Drain and transfer to a large bowl of ice water to cool. |
3. | In a separate medium saucepan, combine red wine vinegar, sugar, cider vinegar, vodka, mustard seeds, black peppercorns, fennel seeds, crushed red pepper flakes, garlic cloves, and fresh dill sprigs. |
4. | Bring the mixture to a boil; simmer for 1 minute or until the sugar has dissolved. |
5. | Pour the marinade over the beans, ensuring they are fully immersed. Cover and let marinate in the refrigerator for at least 24 hours. Alternatively, divide the beans into pint jars, remove bay leaves, pour the marinade into the jars, and seal. Process the jars in a boiling water bath for 15 minutes. |
