Ingredients

1 (9 inch) unbaked pie crust
1 (10 ounce) package frozen chopped spinach
2 eggs
1 cup plain yogurt
1 tablespoon all-purpose flour
¼ teaspoon black pepper
4 ½ ounces fresh mushrooms, thinly sliced
4 ounces shredded Cheddar cheese
¼ cup chopped green onions

Instructions

    1. Begin by preheating the oven to 425 degrees F (220 degrees C). Proceed by pricking the pie crust all over with a fork and baking it for 5 minutes.
    2. In a microwave-safe bowl, place the frozen spinach and cook until thawed. Drain excess liquid and use paper towels to thoroughly dry the spinach.
    3. In a mixing bowl, beat together the eggs, yogurt or sour cream, flour, and pepper until a smooth mixture is achieved. Gently fold in the prepared spinach. Layer the thinly sliced mushrooms, shredded cheese, and chopped scallions sequentially onto the bottom of the pie crust. Pour the spinach mixture over the layered ingredients.
    4. Bake the quiche in the preheated oven for 15 minutes, then reduce the temperature to 350 degrees F (175 degrees C) and continue baking for an additional 30 minutes. Allow the quiche to cool before serving.
