Swiss Chard and Goat Cheese Frittata

2 | tablespoons extra virgin olive oil, divided |
1 | medium red onion, peeled and thinly sliced |
½ | teaspoon salt, divided |
2 | teaspoons fresh rosemary, minced |
3 | garlic cloves, peeled and minced |

4 | ounces ounces goat cheese, crumbled (soft type) |
Instructions

- Begin by washing the Swiss chard. Cut off the stems, dice them finely, and set aside.
- Next, chop the chard leaves.
- Heat 1 tablespoon of extra virgin olive oil in a nonstick 9-inch skillet with an ovenproof handle. Add the thinly sliced onion, ¼ teaspoon of salt, and minced rosemary. Sauté for approximately 10 minutes over medium heat until the onions are very soft and just starting to caramelize.
- Add the chopped Swiss chard leaves and the remaining ¼ teaspoon of salt. Sauté for 1 to 2 minutes until the greens are just wilted. Remove from heat, then stir in the minced garlic and the finely diced Swiss chard stems. Set this mixture aside.
- In a bowl, whisk the eggs. Incorporate the Swiss chard mixture and crumbled goat cheese, stirring to combine.
- After washing and drying the skillet, return it to the stovetop.
- Preheat the oven's broiler.
- Heat the remaining tablespoon of olive oil in the skillet over medium-high heat. Once the oil is hot, pour in the vegetable-egg mixture and cook for 3 to 4 minutes, until the eggs are set on the bottom.
- Transfer the skillet to the preheated broiler and broil for about 3 minutes, until the frittata is firm and golden on top.
- Carefully loosen the frittata from the skillet and invert it onto a large round plate. Cut into wedges and delight in serving this flavorful dish.
