Thai Spicy Peanut Coleslaw
A flavorful and spicy Thai-inspired coleslaw with a crunchy peanut twist.
Ingredients

1 | lb cored and cut into wedges |
1⁄2 | lb peeled, seeded, and cut into quarters |

Instructions
1. | In a food processor, finely chop dry roasted peanuts, garlic, and serrano chilies. Transfer the mixture into a large bowl. |

2. | Using the slicing blade of the food processor, thinly slice the green cabbage and add it to the bowl. Similarly, slice the cucumber and green onions and add them to the bowl. Toss all the vegetables together. |
3. | In a separate bowl, whisk together rice vinegar, sugar, curry powder, and oil. Pour this dressing over the vegetables. Add chopped cilantro and parsley to the bowl and mix everything until well combined. Refrigerate until ready to serve. |
4. | Adjust the amount of serrano chilies to control the level of spiciness as needed. |
