Toasted Coconut, Date, and Nut Bars

2/3 | cup unsweetened shredded coconut |
2 | unsalted cashews |
1 | cup medjool dates, pitted |
1 | tablespoon coconut butter |
1 | tablespoon coconut oil |
1 | teaspoon ground cinnamon |
1 | pinch sea salt |
Instructions
For preparing the bars | |

1. | Preheat the oven to 350°F (180°C). |
2. | Evenly spread the shredded coconut on a baking sheet and toast in the oven for 3 minutes. Stir well and toast for an additional 2 minutes until golden and fragrant. |
3. | Set aside the toasted coconut and use the same baking sheet to toast the cashews for 5 more minutes, until fragrant. |
4. | In a food processor, combine the toasted coconut, cashews, pitted dates, ground cinnamon, and sea salt. Pulse until ingredients are crumb-sized with a few larger pieces. |
5. | Add the coconut butter and 1/2 tablespoon of coconut oil to the food processor. Pulse until the mixture starts to clump. If dry, add another 1/2 tablespoon of coconut oil. |
6. | Line an 8x8-inch brownie pan with parchment paper, leaving excess on two sides. Lightly grease the pan with coconut oil for the parchment to stick. Press the mixture into the pan using plastic wrap to flatten evenly. Freeze for 15-20 minutes, then cut into 8 bars. |
7. | Individually wrap the bars and store them in the refrigerator or freezer. For a delightful treat, try them frozen! |
