This quiche, crafted without eggs, combines blended tofu and milk with a medley of spinach, garlic, onion, Cheddar, and Swiss cheese.

cup 1% milk, or more if needed

package ((10 ounce)) package frozen chopped spinach, thawed and drained

(9 inch) unbaked pie crust

Instructions

1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a blender, blend together tofu, milk, salt, and pepper until a smooth consistency is achieved. Add more milk if needed.
3. In a medium bowl, combine spinach, Cheddar cheese, Swiss cheese, onion, and garlic. Integrate the tofu mixture thoroughly. Pour the mixture into the unbaked pie crust.
4. Bake the quiche in the preheated oven until it sets in the center and turns golden brown on top, approximately 30 minutes. Allow it to rest for 5 minutes before cutting into six generous slices.
