Tofu and Spinach Quiche
This quiche, crafted without eggs, combines blended tofu and milk with a medley of spinach, garlic, onion, Cheddar, and Swiss cheese.
Ingredients
1 | container (8 ounce) container tofu |

1 | cup 1% milk, or more if needed |
1⁄2 | teaspoon salt, or to taste |
1⁄2 | teaspoon pepper |
1 | package (10 ounce) package frozen chopped spinach, thawed and drained |
0.67 | cup shredded Cheddar cheese |
1⁄2 | cup shredded Swiss cheese |
1⁄4 | cup diced onion |
1 | teaspoon minced garlic |
1 | (9 inch) unbaked pie crust |
Instructions
1. | Preheat the oven to 350 degrees F (175 degrees C). |

2. | In a blender, blend together tofu, milk, salt, and pepper until a smooth consistency is achieved. Add more milk if needed. |
3. | In a medium bowl, combine spinach, Cheddar cheese, Swiss cheese, onion, and garlic. Integrate the tofu mixture thoroughly. Pour the mixture into the unbaked pie crust. |
4. | Bake the quiche in the preheated oven until it sets in the center and turns golden brown on top, approximately 30 minutes. Allow it to rest for 5 minutes before cutting into six generous slices. |
