These high fiber, low-calorie pumpkin bran muffins are a nutritious and delicious treat for any time of the day.

2 | teaspoons baking soda |
1 | tablespoon cinnamon |
1 | teaspoon nutmeg |
½ | cup golden raisins |
3 | egg whites |
½ | cup fat-free buttermilk |
½ | cup water |
½ | cup canned pumpkin |
1 | teaspoon vanilla extract |
12 | (1 g) packets Splenda sugar substitute |
Instructions

- Preheat the oven to 400 degrees Fahrenheit. Grease the muffin tins with a non-stick cooking spray and set aside.
- In a large mixing bowl, combine the whole wheat flour, unprocessed natural bran, baking soda, cinnamon, nutmeg, and golden raisins.
- In a separate medium bowl, whisk together the egg whites, fat-free buttermilk, water, canned pumpkin, vanilla extract, and Splenda sugar substitute.
- Pour the wet ingredients into the dry ingredients and mix until well combined. Fill each muffin tin halfway with the batter.
- Bake the muffins for 15 minutes or until a toothpick inserted comes out clean. Allow them to cool on a wire rack. Any leftover muffins can be frozen and defrosted as needed.
