1 | (28 ounce) can diced tomatoes, undrained |
1 | (6 ounce) can tomato paste |
1⁄4 | cup minced fresh parsley |
1 | teaspoon dried basil |
1 | teaspoon dried thyme |
3⁄4 | cup uncooked alphabet pasta |
Instructions
For the meatballs | |

1. | In a mixing bowl, combine the lightly beaten egg, quick-cooking oats, grated parmesan cheese, garlic powder, and Italian seasoning. Crumble the lean ground turkey over the mixture and mix thoroughly. Shape into 1/2-inch balls. In a nonstick skillet, brown the meatballs in small batches over medium heat until cooked through. Set aside. |
For the soup | |
1. | In a large saucepan or Dutch oven, heat olive oil over medium heat. Saute the chopped onion, celery, carrot, and diced potato for 5 minutes or until they are crisp-tender. Add the minced garlic and saute for an additional minute. Stir in the reduced-sodium chicken broth, diced tomatoes, tomato paste, fresh parsley, dried basil, and dried thyme. Bring the mixture to a boil. Add the alphabet pasta and cook for 5-6 minutes. Reduce the heat and add the cooked meatballs. Simmer uncovered for 15-20 minutes or until the vegetables are tender. |
