For the meatballs

1 lightly beaten egg
2 tablespoons quick-cooking oats
2 tablespoons grated parmesan cheese
1 garlic powder
1 italian seasoning
12 lb lean ground turkey

For the soup

1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1 cup diced peeled potato
1 tablespoon olive oil
2 garlic cloves, minced
4 (14 ½ ounce) cans reduced-sodium chicken broth
1 (28 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
14 cup minced fresh parsley
1 teaspoon dried basil
1 teaspoon dried thyme
34 cup uncooked alphabet pasta

Instructions

  • For the meatballs

    1. In a mixing bowl, combine the lightly beaten egg, quick-cooking oats, grated parmesan cheese, garlic powder, and Italian seasoning. Crumble the lean ground turkey over the mixture and mix thoroughly. Shape into 1/2-inch balls. In a nonstick skillet, brown the meatballs in small batches over medium heat until cooked through. Set aside.
  • For the soup

    1. In a large saucepan or Dutch oven, heat olive oil over medium heat. Saute the chopped onion, celery, carrot, and diced potato for 5 minutes or until they are crisp-tender. Add the minced garlic and saute for an additional minute. Stir in the reduced-sodium chicken broth, diced tomatoes, tomato paste, fresh parsley, dried basil, and dried thyme. Bring the mixture to a boil. Add the alphabet pasta and cook for 5-6 minutes. Reduce the heat and add the cooked meatballs. Simmer uncovered for 15-20 minutes or until the vegetables are tender.
