A delicious and flavorful dish of beef fajitas served with stir fried vegetables, wrapped in warm tortillas and topped with your favorite toppings.

Ingredients

¼ cup divided
2 tablespoons
1 tablespoon
1 teaspoon
1 teaspoon divided
1 lb cut into ¼ inch slices
2 thinly sliced
1 seeded and thinly sliced
1 thinly sliced
4 (8 inch)

Instructions

1. In a shallow dish or zip-top freezer bag, combine 2 tablespoons of vegetable oil, fresh lime juice, bottled minced garlic, ground cumin, and 1/2 teaspoon of salt. Add the thinly sliced flank steak, cover or seal, and let it marinate for 30 minutes.
2. Remove the steak from the marinade, discarding the leftover marinade.
3. Pat the beef dry with paper towels.
4. In a large skillet or wok, heat the remaining vegetable oil over high heat. Add the beef and stir fry for 3 minutes.
5. Using a slotted spoon, remove the beef from the skillet and set aside. Reduce the heat to medium.
6. Add the thinly sliced green peppers, jalapeno peppers, and red onion to the skillet. Sprinkle with the remaining 1/2 teaspoon of salt. Stir fry for 6 minutes or until the vegetables are tender.
7. Wrap the flour tortillas in plastic wrap and microwave on high for 20 seconds.
8. Evenly spoon the beef and vegetable mixtures over the tortillas. Add your desired toppings, such as salsa, guacamole, sour cream, and chopped fresh cilantro. Roll up the tortillas and serve immediately.
