Caramelized Onion Chicken Soup

Ingredients

4 | day-old or toasted slices baguette |

Instructions
1. | Begin by preparing the onions. Dice the sweet yellow onions to your preference and place them in a crock-pot or slow cooker. Toss the onions with olive oil, salt, and pepper. |

2. | Set the crock-pot to low for 8-10 hours or high for about 5 hours, allowing the onions to caramelize beautifully overnight. |
3. | Once the onions are caramelized, add the chicken broth and shredded chicken to the crock-pot. |
4. | Increase the crock-pot setting to high to bring the soup to temperature and allow the flavors to meld. Adjust the salt level if necessary. |
5. | When ready to serve, preheat the broiler. Ladle the caramelized onion chicken soup into ovenproof bowls. Top each bowl with a slice of day-old or toasted baguette, a slice of Swiss cheese, and a sprinkle of Parmesan cheese. |
