Caramelized Onion Chicken Soup

3 | sweet yellow onions, sliced or diced to your preference |

4 | chicken broth (I use Swanson, 100% natural, no MSG added) |
1 | cooked chicken breast, shredded |
4 | day-old or toasted slices baguette |
4 | slices Swiss cheese |
¼ | cup Parmesan cheese |

- Begin by preparing the onions. Dice the sweet yellow onions to your preference and place them in a crock-pot or slow cooker. Toss the onions with olive oil, salt, and pepper.
- Set the crock-pot to low for 8-10 hours or high for about 5 hours, allowing the onions to caramelize beautifully overnight.
- Once the onions are caramelized, add the chicken broth and shredded chicken to the crock-pot.
- Increase the crock-pot setting to high to bring the soup to temperature and allow the flavors to meld. Adjust the salt level if necessary.
- When ready to serve, preheat the broiler. Ladle the caramelized onion chicken soup into ovenproof bowls. Top each bowl with a slice of day-old or toasted baguette, a slice of Swiss cheese, and a sprinkle of Parmesan cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly. Serve hot and enjoy the delicious flavors of this comforting soup.
