A comforting and hearty soup with caramelized onions, shredded chicken, and melted cheese on top.

Ingredients

3 sweet yellow onions, sliced or diced to your preference
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
4 chicken broth (I use Swanson, 100% natural, no MSG added)
1 cooked chicken breast, shredded
4 day-old or toasted slices baguette
4 slices Swiss cheese
¼ cup Parmesan cheese

Instructions

    1. Begin by preparing the onions. Dice the sweet yellow onions to your preference and place them in a crock-pot or slow cooker. Toss the onions with olive oil, salt, and pepper.
    2. Set the crock-pot to low for 8-10 hours or high for about 5 hours, allowing the onions to caramelize beautifully overnight.
    3. Once the onions are caramelized, add the chicken broth and shredded chicken to the crock-pot.
    4. Increase the crock-pot setting to high to bring the soup to temperature and allow the flavors to meld. Adjust the salt level if necessary.
    5. When ready to serve, preheat the broiler. Ladle the caramelized onion chicken soup into ovenproof bowls. Top each bowl with a slice of day-old or toasted baguette, a slice of Swiss cheese, and a sprinkle of Parmesan cheese.
    6. Place the bowls under the broiler until the cheese is melted and bubbly. Serve hot and enjoy the delicious flavors of this comforting soup.
