Ingredients

1 (6 lb) roasting chickens
2 tablespoons olive oil
1 12 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground allspice
1 teaspoon paprika
12 teaspoon salt
12 teaspoon ground black pepper
1 large lemon, halved

Instructions

    1. Preheat the oven to 375°F (190°C).
    2. Rinse the whole roasting chicken and pat it dry with paper towels.
    3. Place the prepared chicken on a rack in a large roasting pan.
    4. In a small bowl, combine the olive oil, ground cumin, garlic powder, onion powder, allspice, paprika, salt, and black pepper to form a fragrant spice paste.
    5. Rub the spice paste generously all over the chicken, ensuring it is evenly coated.
    6. Roast the chicken in the preheated oven for approximately 1 hour.
    7. Squeeze the juice from the lemon halves over the chicken, then place the lemon halves inside the main cavity of the chicken.
    8. Continue roasting the chicken until it is fully cooked through and a thermometer inserted into the thickest part of the thigh registers 175°F (80°C), for about an additional hour.
    9. Transfer the beautifully roasted chicken to a serving platter and allow it to rest for 15 minutes before carving.
