1⁄2 | teaspoon ground black pepper |
1 | large lemon, halved |
Instructions

- Preheat the oven to 375°F (190°C).
- Rinse the whole roasting chicken and pat it dry with paper towels.
- Place the prepared chicken on a rack in a large roasting pan.
- In a small bowl, combine the olive oil, ground cumin, garlic powder, onion powder, allspice, paprika, salt, and black pepper to form a fragrant spice paste.
- Rub the spice paste generously all over the chicken, ensuring it is evenly coated.
- Roast the chicken in the preheated oven for approximately 1 hour.
- Squeeze the juice from the lemon halves over the chicken, then place the lemon halves inside the main cavity of the chicken.
- Continue roasting the chicken until it is fully cooked through and a thermometer inserted into the thickest part of the thigh registers 175°F (80°C), for about an additional hour.
- Transfer the beautifully roasted chicken to a serving platter and allow it to rest for 15 minutes before carving.
