| 1 | large lemon, halved | 
Instructions
| 1. | Preheat the oven to 375°F (190°C). |

| 2. | Rinse the whole roasting chicken and pat it dry with paper towels. | 
| 3. | Place the prepared chicken on a rack in a large roasting pan. | 
| 4. | In a small bowl, combine the olive oil, ground cumin, garlic powder, onion powder, allspice, paprika, salt, and black pepper to form a fragrant spice paste. | 
| 5. | Rub the spice paste generously all over the chicken, ensuring it is evenly coated. | 
| 6. | Roast the chicken in the preheated oven for approximately 1 hour. | 
| 7. | Squeeze the juice from the lemon halves over the chicken, then place the lemon halves inside the main cavity of the chicken. | 
| 8. | Continue roasting the chicken until it is fully cooked through and a thermometer inserted into the thickest part of the thigh registers 175°F (80°C), for about an additional hour. | 
| 9. | Transfer the beautifully roasted chicken to a serving platter and allow it to rest for 15 minutes before carving. |
