4 large chicken breasts, skinned, halved, and boned
1 tablespoon butter, softened
1 tablespoon fresh parsley, chopped
1 tablespoon fines herbes
1 teaspoon dried oregano, crushed
1 teaspoon dried marjoram, crushed
2 ounces Monterey Jack cheese, cut into eight strips
1 egg, beaten
1 tablespoon water
12 teaspoon vegetable oil
14 cup all-purpose flour
12 cup dry breadcrumbs, fine
14 cup dry white wine
minced fresh parsley

Instructions

  • For Preparing the Chicken Rolls

    1. Begin by wrapping each chicken breast between two pieces of clear plastic wrap. Using a meat mallet, pound the chicken to 1/8" thickness, starting from the center and working towards the edges. Remove the plastic wrap and repeat with the remaining chicken breasts. Preheat the oven to 350°F (180°C).
    2. In a bowl, combine softened butter, chopped parsley, fines herbes, dried oregano, and dried marjoram. Use half of this mixture to dot onto each chicken breast half, reserving the other half. Place a strip of Monterey Jack cheese on each chicken piece, fold in the sides, and roll them up jelly-roll style. Press the edges together to seal.
    3. In a medium bowl, mix the beaten egg with water and vegetable oil. Coat each chicken roll with flour, dip into the egg mixture, and then roll in breadcrumbs to coat evenly.
    4. Arrange the chicken rolls seam side down in a large baking dish. Bake, uncovered, for 20 minutes. Meanwhile, melt the reserved herb mixture and add the white wine. After the initial 20 minutes of baking, pour the wine mixture over the chicken rolls. Bake for an additional 20 minutes or until the chicken is tender (avoid overbaking).
    5. Once cooked, drain the chicken rolls, reserving the pan juices. Serve the chicken over hot cooked noodles, garnished with fresh parsley, and pass the reserved juices alongside.
