   Exquisite Chinese Chicken Salad

Ingredients

| 1⁄3 | cup slivered almonds | 
| 2 | tablespoons brown sugar | 
| 1 | head iceberg lettuce, chopped | 
| 3 | medium carrots, peeled and grated | 
| 1 1⁄2 | cups crisp chow mein noodles | 
| 1⁄3 | cup toasted slivered almonds (or use ⅓ carmelized almonds from recipe above) | 
| 1 | tablespoon sesame seeds, toasted |

| 1. | To poach the chicken, place the boneless skinless chicken breast halves in a medium saucepan with soy sauce and enough water to cover. Bring to a boil, cover, and remove from heat. Allow the chicken to stand, covered, for 30 minutes. Remove the chicken from the liquid, let it cool, then shred into bite-sized pieces. | 
| 2. | For the dressing, blend mayonnaise, sugar, rice wine vinegar, sesame oil, soy sauce, cayenne pepper, garlic, ginger, and cilantro until smooth. Refrigerate until ready to use. | 
| 3. | To prepare the caramelized almonds, melt butter in a skillet over medium heat. Add slivered almonds and sauté until golden. Stir in brown sugar, then spread the almonds on a baking sheet to cool. Once cooled, the almonds will have a candied coating. | 
| 4. | In a large salad bowl, combine the poached chicken, chopped iceberg lettuce, grated carrots, chow mein noodles, and dressing. Garnish each serving with caramelized almonds and toasted sesame seeds. |
