1 ¾ teaspoons active dry yeast
1 ¾ cups bread flour
2 tablespoons bread flour
3 tablespoons sugar
¾ teaspoon salt
2 whole eggs
1 egg yolk
¼ cup water
2 tablespoons water
8 tablespoons unsalted butter

Instructions

    1. Begin by adding all ingredients except the butter to your bread machine in the order recommended by the manufacturer. Start the machine on the basic bread cycle.
    2. Cut the unsalted butter into tablespoon-size pieces.
    3. About 10 minutes before the end of the initial kneading cycle, start incorporating the butter, adding 1 tablespoon every minute.
    4. Take your time and do not rush this process.
    5. Allow the bread machine to complete its cycle.
    6. Once the brioche is baked and the cycle is finished, let it cool in the OPENED machine for approximately 20 minutes. This will help maintain a firm crust while keeping the center moist.
