Traditional Newfoundland White Bread

2 | teaspoons salt |
2 | tablespoons sugar |
3 | tablespoons unsalted butter, melted |
2 | warm milk |

- In a large bowl or in the bowl of a large electric mixer with a dough hook, combine 3 cups of flour, sugar, instant yeast, and salt.
- Add the melted butter and warm milk to the mixture.
- Using a wooden spoon or the regular paddle of your electric mixer, beat the mixture for 4-5 minutes until smooth with no lumps. If using an electric mixer, switch to the dough hook and gradually add the remaining 2 cups of flour. If mixing by hand, gradually incorporate the flour until a soft dough forms.
- Turn the dough onto a countertop or bread board for kneading. Adjust the flour as needed during the 10-minute kneading process until the dough is smooth and elastic.
- Cover the dough and let it rest and rise for one hour.
- Punch down the dough, knead by hand for a few minutes, then let it rest for another 10 minutes.
- Grease 2 medium loaf pans. Divide the dough into 6 equal portions, shaping each into a ball. Place 3 balls of dough in each loaf pan.
- Cover the pans with a clean tea towel and allow the dough to rise until it reaches about 2 inches above the pan rim, approximately 2 hours depending on room temperature.
- Bake at 375 degrees F for 30-40 minutes, adjusting the baking time based on the size of the pans being used.
- Once baked, transfer the loaves onto a wire rack to cool. Optionally, brush the tops with melted butter to soften the crust.
