Classic Chicken Tortilla Soup
A delightful and authentic Mexican soup packed with flavors of seasoned chicken, tomatoes, and a hint of spice, topped with melted cheese and crunchy tortilla chips.
Ingredients

2 | tablespoons flour |
1 3/4 | tablespoons flour |
3 | cups water |
1 | Rotel Tomatoes |
1 | diced tomatoes |
1/4 | cup fresh cilantro |
1/4 | teaspoon sugar |
1 | tablespoon Tabasco sauce |
8 | ounces shredded |
4-8 | ounces tortilla chips |
Instructions
1. | In a large pot, heat vegetable oil over medium heat. Sauté the chopped yellow onion and minced garlic until translucent. |

2. | Add 2 tablespoons of flour to the onion and garlic mixture, stirring well to incorporate. |
3. | In a separate bowl, whisk 1 3/4 tablespoons of flour with water until smooth. Pour this mixture into the pot, stirring constantly. Let the soup simmer for 10 minutes. |
4. | Stir in the Rotel tomatoes, diced tomatoes, fresh cilantro, and cooked diced chicken. Cook for an additional 20 minutes over medium heat. |
5. | Season the soup with sugar and Tabasco sauce to taste, then simmer for another 10 minutes. |
6. | Add the shredded cheddar cheese to the soup, stirring until melted over low heat. |
7. | Crush the tortilla chips and sprinkle them into the soup, allowing it to rest for 15 minutes before serving. |
8. | When serving, garnish with extra shredded cheese and tortilla chips as desired. |
