4 lbs small red potatoes
4 tablespoons butter
1 (5/8 ounce) package Italian salad dressing mix
milk (I use skim milk)
1 12 cups mozzarella cheese
salt & pepper
3 lbs large red potatoes
8 tablespoons butter
1 12 (5/8 ounce) packages Italian salad dressing mix
1 cup milk (I use skim milk)
2 12 cups mozzarella cheese
salt & pepper

Instructions

1. Prepare the potatoes by halving larger ones for a double batch and leaving small ones whole for a regular batch.
2. Place all potatoes in a deep pot and cover with water.
3. Cover the pot with a lid and bring it to a boil.
4. Once boiling, uncover and cook until tender, approximately twelve to fifteen minutes.
5. Drain the potatoes and return them to the hot pot.
6. Add butter, Italian salad dressing mix, milk, and mozzarella cheese according to your desired creaminess and cheesiness.
7. Mash the potatoes to your preferred texture.
8. Season with salt and pepper to taste before serving.
