Ingredients

For Marinated Goat Cheese Rounds

6 fresh soft fresh goat cheese
3 tablespoons white balsamic vinegar (or use regular red balsamic vinegar)
2 garlic cloves, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon cracked black pepper
12 cured green olives, pitted and coarsely chopped
1 cup extra virgin olive oil

For Crostini

9 slices French bread (½-inch thick)
2 tablespoons olive oil
1 teaspoon minced fresh garlic clove

Instructions

  • For Marinated Goat Cheese Rounds

    1. Gently roll the fresh goat cheese into a 4" long log and slice it into 1" thick rounds, placing them in a shallow dish.
    2. In a small bowl, whisk together white balsamic vinegar, chopped garlic, fresh thyme, cracked black pepper, chopped olives, and extra virgin olive oil until well blended.
    3. Pour the marinade over the goat cheese rounds and refrigerate for 2 hours to 1 week to allow the flavors to meld. Before serving, let the cheese rounds warm to room temperature for about 30 minutes.
  • For Crostini

    1. Preheat the broiler or grill. Drizzle the French bread slices with olive oil and grill or broil until they turn golden brown.
    2. As the crostini come out of the oven or grill, rub them with minced fresh garlic and cut them in half on the diagonal.
    3. Serve the warm crostini alongside the marinated goat cheese rounds. Enjoy this elegant appetizer!
