9 | slices French bread (½-inch thick) |

1 | teaspoon minced fresh garlic clove |

For Marinated Goat Cheese Rounds
- Gently roll the fresh goat cheese into a 4" long log and slice it into 1" thick rounds, placing them in a shallow dish.
- In a small bowl, whisk together white balsamic vinegar, chopped garlic, fresh thyme, cracked black pepper, chopped olives, and extra virgin olive oil until well blended.
- Pour the marinade over the goat cheese rounds and refrigerate for 2 hours to 1 week to allow the flavors to meld. Before serving, let the cheese rounds warm to room temperature for about 30 minutes.

For Crostini
- Preheat the broiler or grill. Drizzle the French bread slices with olive oil and grill or broil until they turn golden brown.
- As the crostini come out of the oven or grill, rub them with minced fresh garlic and cut them in half on the diagonal.
