3 ounces softened light cream cheese
1 cup skim milk
4 eggs
3 (12 ounce) cups shredded low-fat cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 frozen chopped broccoli, thawed and well drained
1 small onion, finely chopped
5 fresh mushrooms, sliced

Instructions

  • For preparing the quiche

    1. Begin by beating the softened light cream cheese in a small mixing bowl.
    2. Add the skim milk, eggs, and a touch of pepper. Beat the mixture until it is smooth.
    3. Gently stir in the shredded low-fat cheddar cheese, the thawed and squeezed dry chopped spinach, the well-drained chopped broccoli, the finely chopped small onion, and the sliced fresh mushrooms.
    4. Transfer the mixture to a quiche pan that has been coated with cooking spray.
    5. Bake the quiche at 350°F (175°C) for 45 minutes to 1 hour, until the top is golden and the filling is set.
