4 chicken cutlets
1 tablespoon olive oil
3 tablespoons butter
1 ½ Brut champagne
1 tablespoon flour
teaspoon allspice
¾ teaspoon dried basil
teaspoon paprika
1 cup marinated artichoke hearts, drained
cup Greek olives, pitted and halved
2 tablespoons pine nuts

Instructions

  • Preparation of Mediterranean Champagne Chicken

    1. Heat a large skillet over medium heat.
    2. Add a splash of olive oil to the skillet.
    3. Add the chicken cutlets and cook them on both sides until they are cooked through.
    4. Remove the cooked chicken cutlets from the skillet and set them aside.
    5. In the same skillet with the drippings, add the butter and cook until melted.
    6. Pour in the champagne and increase the heat to medium-high.
    7. Sprinkle in the allspice, basil, and paprika, stirring the mixture well.
    8. Gradually stir in the flour while continuing to stir.
