Recipe
Flavorful Baked Cod with Citrus Zest

Three ingredients, one sheet of foil, forty minutes: cod fillets showered with fresh lemon zest and juice, dusted generously with Old Bay, and baked until the flesh turns opaque and flakes at a touch. The seasoning blend brings the celery-salt-and-paprika complexity; the citrus keeps it bright. It's the weeknight fish recipe you memorize rather than bookmark.
Ingredients
4 | cod fish fillets (4 ounces each) |
|---|---|
1 | lemon, cut into 4 wedges |
2 | teaspoons Old Bay Seasoning |
Instructions
| 1. | Preheat the oven to 350°F (180°C) and lightly coat 4 squares of aluminum foil with cooking spray. |
|---|---|
| 2. | Lay a cod fillet on each piece of aluminum foil. Squeeze a wedge of lemon over each fillet, and sprinkle each with 1/2 teaspoon of Old Bay seasoning. |
| 3. | Wrap the aluminum foil around the fish, ensuring a tight seal. Place in the oven and bake until the fish is opaque throughout when tested with the tip of a knife, approximately 30 to 40 minutes. Serve immediately. |
